May 2008 Tip of The Month

Celebrate this year's Cinco de Mayo with nutritious but still delicious favorites. Foods like crispy taco shells, taco salads, nachos with cheese, guacamole, and tortilla chips and salsa are tasty and can be high in fat. Here are a few hints and dish ideas to keep the holiday festive and flavorful, but without the guilt. Bring on the beans! Mexican staples such as tortillas, beans and rice are great sources of complex carbohydrates. Experiment with a variety of grains and tons of vegetables. Beans, such as pinto and black beans, are chock full of healthy fiber.

  • Fajitas, enchiladas, burritos or tamales
  • Soft tacos with chicken, beef or beans
  • Gazpacho or tortilla soup
  • Chile verde
  • Red or black beans and rice
  • Arroz con pollo (chicken with rice)
  • Veracruz-style seafood dishes
  • Flan or fruit for dessert.
